I’m a spice wimp)&lt;/li&gt;&lt;li&gt;1 1/2 tsp salt&lt;/li&gt;&lt;li&gt;1/4 tsp pepper&lt;/li&gt;&lt;li&gt;4 TBS olive oil&lt;/li&gt;&lt;li&gt;1 large egg&lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Pre-heat oven to 350&lt;/li&gt;&lt;li&gt;Spread the walnuts on a baking sheet and toast in the oven until fragrant and darkened - about 10 minutes. Take out and leave them to cool&lt;/li&gt;&lt;li&gt;Place the lentils in a saucepan and cover with about an inch of water above the lentils&lt;/li&gt;&lt;li&gt;Bring to a boil then reduce to a simmer&lt;/li&gt;&lt;li&gt;Cover and cook until the lentils are tender but still holding their shape, 15-20 minutes. I may just have to make it again tomorrow!&lt;br /&gt;&lt;a href="http://lh3.ggpht.com/_nsbFF8gCqmw/S_s2AGx_P_I/AAAAAAAAAP4/Bht9uuirboA/s1600-h/IMG_6056%5B3%5D.jpg"&gt;&lt;img alt="IMG_6056" border="0" height="306" src="http://lh6.ggpht.com/_nsbFF8gCqmw/S_s2A3z3nAI/AAAAAAAAAP8/Dj6iloUs7eI/IMG_6056_thumb%5B1%5D.jpg?imgmax=800" style="border: 0px none; display: inline;" title="IMG_6056" width="402" /&gt;&lt;/a&gt; &lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 TBS&amp;nbsp; butter&lt;/li&gt;&lt;li&gt;1 cup chopped onion&lt;/li&gt;&lt;li&gt;2tsp salt&lt;/li&gt;&lt;li&gt;1/4 tsp pepper&lt;/li&gt;&lt;li&gt;1 tsp curry powder*&lt;/li&gt;&lt;li&gt;2 cans chicken broth**&lt;/li&gt;&lt;li&gt;3 cups water&lt;/li&gt;&lt;li&gt;2 lbs carrots peeled and cut into chunks&lt;/li&gt;&lt;li&gt;1 or 2 tsp fresh lemon juice&lt;/li&gt;&lt;li&gt;2 TBS coarsely chopped cilantro for garnish&lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Heat the butter in a saucepan over medium heat&lt;/li&gt;&lt;li&gt;Add the onion, curry powder, salt and pepper&lt;/li&gt;&lt;li&gt;Cook, stirring occasionally, for about 5 minutes or until the onion is soft.&lt;/li&gt;&lt;li&gt;Add the broth, carrots, and 3 cups of water&lt;/li&gt;&lt;li&gt;Bring to a boil then reduce the heat and simmer for about 20 minutes or until the carrots are soft&lt;/li&gt;&lt;li&gt;In a blender puree the soup in batches. Remove the center of the blender lid and cover with a cloth. I don’t know what will happen if you don’t, but that’s what the recipe says to do!&lt;/li&gt;&lt;li&gt;Put blended soup in a clean saucepan and when it’s all blended and in the saucepan stir in the lemon juice. I then used a wooden spoon to push the veggies down… while the blender was running… please don’t do that, you will be out a wooden spoon and you will have unwanted fiber in your smoothie. They are easily doubled and freeze well.&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 cup milk &lt;/li&gt;&lt;li&gt;1 cup water &lt;/li&gt;&lt;li&gt;2 tablespoons butter &lt;/li&gt;&lt;li&gt;1 tablespoon white sugar &lt;/li&gt;&lt;li&gt;1 1/2 teaspoons salt &lt;/li&gt;&lt;li&gt;5 1/2 cups all-purpose flour &lt;/li&gt;&lt;li&gt;1 (2.5 tsp) (.25 ounce) envelope active dry yeast &lt;/li&gt;&lt;li&gt;1 egg yolk &lt;/li&gt;&lt;li&gt;1 tablespoon water &lt;/li&gt;&lt;/ul&gt;&lt;h5&gt;Directions&lt;/h5&gt;&lt;ol&gt;&lt;li&gt;Combine the milk, 1 cup of water, butter, sugar and salt in a saucepan. Bring to a boil then remove from the heat and let stand until lukewarm. If the mixture is too hot, it will kill the yeast.&amp;nbsp; And if it’s too cold you will have to reheat it and then it will be too hot and you don’t want to do that. Trust me. I did it. If I can hold my finger in the liquid for 5 seconds then I decide it’s a good temperature. &lt;/li&gt;&lt;li&gt;In a large bowl, stir together the flour and yeast. Pour in wet ingredients and stir until the dough starts to pull together. If you have a stand mixer, use the dough hook to mix for about 8 minutes. If not, knead the dough on a floured surface for about 10 minutes. Don’t over knead it as it will get really chewy. I know. I did that too. Place the dough in a greased bowl, turning to coat. Cover and let stand until doubled in size, about 1 hour. &lt;/li&gt;&lt;li&gt;Punch down the dough and divide into 12 even portions. Make tight balls out of the dough by pulling the dough tightly around and pinching it at the bottom. Place on a baking sheet lined with wax paper or tin foil – wax paper will stink. I use tin foil. Let rolls rise for about 20 minutes. Squish each ball with the palm of your hand until it is 3 to 4 inches wide. &lt;/li&gt;&lt;li&gt;Preheat the oven to 400 degrees F (200 degrees C). Mix together the egg yolk and 1 tablespoon of water in a small bowl. Brush onto the tops of the rolls. I found this recipe and it’s really good. The baking soda kind of scared me but it works. Trust me!&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;just under 1/2 tsp baking soda &lt;/li&gt;&lt;li&gt;2 cups boiling water &lt;/li&gt;&lt;li&gt;6 regular tea bags (or 4 big ones) &lt;/li&gt;&lt;li&gt;3/4 cup white sugar (or some honey to taste) &lt;/li&gt;&lt;li&gt;6 cups cool water (or less depending on how strong you like it. I found 6 diluted it too much) &lt;/li&gt;&lt;/ul&gt;&lt;h5&gt;Directions&lt;/h5&gt;&lt;ol&gt;&lt;li&gt;Boil water and sugar together. &lt;/li&gt;&lt;li&gt;Sprinkle baking soda into a 64-ounce pitcher, add tea bags and boiling sugar water. I made use of the recipes to make Crock Pot Mac&amp;amp;Cheese last night and it was SO good! I doubled the recipe and changed a couple of things but I’ll give you the original and then my version.&lt;br /&gt;&lt;ul&gt;&lt;li&gt;8oz of your favorite pasta&lt;/li&gt;&lt;li&gt;1 egg (beaten)&lt;/li&gt;&lt;li&gt;1 tsp salt&lt;/li&gt;&lt;li&gt;1/2 cup butter (melted)&lt;/li&gt;&lt;li&gt;12oz can evaporated milk&lt;/li&gt;&lt;li&gt;3 cups sharp cheddar cheese&lt;/li&gt;&lt;li&gt;1 1/2 cups Milk&lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Cook the pasta&lt;/li&gt;&lt;li&gt;Place all the ingredients in the crock pot on low for 3 hours&lt;/li&gt;&lt;/ol&gt;I doubled the recipe as I like pasta as my main dish, not my side dish. I used 3 eggs because there were three eggs left and I didn’t want one to feel lonely. I didn’t melt my butter before hand, I figured the heat of the freshly cooked pasta would melt it for me. I only had one 14oz can of evaporated milk. I used 4 cups of cheese as 6 cups seemed like way too much. I used slightly less than 3 cups of milk. I also didn’t have enough time to cook it for 3 hours so I cooked it for 1.5 hours on low and .5hours on high. So I made Almond Cinnamon Rolls. I used sour dough bread for the rolls but they didn’t turn out as light as I like them, so I’m just going to cover the filling and you can choose your own dough recipe.&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;4TBS of butter &lt;/li&gt;&lt;li&gt;2 tsp almond extract &lt;/li&gt;&lt;li&gt;1/2 cup brown sugar &lt;/li&gt;&lt;li&gt;3 tsp ground cinnamon &lt;/li&gt;&lt;li&gt;2 tsp ground nutmeg &lt;/li&gt;&lt;/ul&gt;&amp;nbsp; &lt;br /&gt;&lt;ol&gt;&lt;li&gt;Roll dough out to 1/4 inch thick rectangle. &lt;/li&gt;&lt;li&gt;Melt butter and add almond extract to it. &lt;/li&gt;&lt;li&gt;Drizzle butter mixture onto rolled out dough &lt;/li&gt;&lt;li&gt;Mix brown sugar, cinnamon and nutmeg together and sprinkle on top of the dough&lt;a href="http://lh5.ggpht.com/_nsbFF8gCqmw/S8ZzVFcy0tI/AAAAAAAAAO0/8vKQWZAibjw/s1600-h/IMG_4957%5B2%5D.jpg"&gt;&lt;img alt="IMG_4957" border="0" height="184" src="http://lh3.ggpht.com/_nsbFF8gCqmw/S8ZzVp2CtUI/AAAAAAAAAO4/e684g5bFYk0/IMG_4957_thumb.jpg?imgmax=800" style="border-width: 0px; display: inline;" title="IMG_4957" width="244" /&gt;&lt;/a&gt; &lt;/li&gt;&lt;li&gt;Roll dough into a long log and cut into pieces as big as you’d like. &lt;/li&gt;&lt;li&gt;&amp;nbsp;&lt;a href="http://lh6.ggpht.com/_nsbFF8gCqmw/S8ZzVy2k8QI/AAAAAAAAAO8/fHu5625OvRA/s1600-h/IMG_4959%5B2%5D.jpg"&gt;&lt;img alt="IMG_4959" border="0" height="184" src="http://lh3.ggpht.com/_nsbFF8gCqmw/S8ZzWNDwZrI/AAAAAAAAAPA/gQ5elpayj30/IMG_4959_thumb.jpg?imgmax=800" style="border-width: 0px; display: inline;" title="IMG_4959" width="244" /&gt;&lt;/a&gt; &lt;/li&gt;&lt;li&gt;Place in greased baking dish, cover and let it rise for an hour or two&lt;/li&gt;&lt;li&gt;Bake in a pre-heated oven set at 350 for 25 minutes or until lightly golden brown on top (more or less depending on your choice of dough) &lt;/li&gt;&lt;li&gt;Let cool for about 5 minutes then flip the rolls onto a plate. &lt;/li&gt;&lt;/ol&gt;&lt;br /&gt;For the icing you will need &lt;br /&gt;&lt;ul&gt;&lt;li&gt;Icing sugar &lt;/li&gt;&lt;li&gt;Milk &lt;/li&gt;&lt;li&gt;Almond extract &lt;/li&gt;&lt;/ul&gt;I don’t remember how much I used of any of those. But just keep adding until the taste and consistency are how you like them, then drizzle the icing on the rolls. So I looked up a few recipes and invented!&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1/2 cup olive oil&lt;/li&gt;&lt;li&gt;1 tsp balsamic vinegar &lt;/li&gt;&lt;li&gt;1/8 cup mixed herbs I&amp;nbsp; used a mixture of chives, rosemary, basil, thyme and Italian seasoning.&lt;/li&gt;&lt;li&gt;1 or 2 garlic cloves - minced&lt;/li&gt;&lt;li&gt;1/8 cup Parmesan Cheese &lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Pour the olive oil into a bowl and mix in the herbs, balsamic vinegar and minced garlic (I put everything in a food processor for a few seconds)&lt;/li&gt;&lt;li&gt;Refrigerate until ready to serve (make at least 30 minutes ahead of time but not more than two hours ahead of time, I read that's not a good idea)&lt;/li&gt;&lt;li&gt;Right before serving mix in the Parmesan&lt;/li&gt;&lt;/ol&gt;Everything can be adjusted to your taste. The titled had me intrigued and I had to know just how one can make bread in 60 seconds. Well, obviously you can't have the finished product in 60 seconds, but you can mix all the ingredients in that amount of time.&lt;br /&gt;&lt;br /&gt;You will need:&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 cups warm water&lt;/li&gt;&lt;li&gt; 1/4 tsp dry yeast&lt;/li&gt;&lt;li&gt;4 cups flour&lt;/li&gt;&lt;li&gt;1 tsp salt&lt;/li&gt;&lt;/ul&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://1.bp.blogspot.com/_nsbFF8gCqmw/S57JJeGPf0I/AAAAAAAAAM4/Lc9Gjx9Xew4/s1600-h/IMG_4629.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" src="http://1.bp.blogspot.com/_nsbFF8gCqmw/S57JJeGPf0I/AAAAAAAAAM4/Lc9Gjx9Xew4/s320/IMG_4629.jpg" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;ol&gt;&lt;li&gt;Mix the yeast and warm water in a large bowl. &lt;/li&gt;&lt;li&gt;Add the flour and salt and mix with a spoon until well mixed.&lt;/li&gt;&lt;li&gt;Cover with plastic wrap or a dish towel and place somewhere safe for 8-12 hours. But here’s a recipe I tweaked Friday night.&amp;nbsp; I only used one egg and I didn’t measure anything. I was able to cook 4 eggs at a time in the pot I used.&lt;/li&gt;&lt;li&gt;Cook for about 5 minutes or until the yolk is as soft or hard as you want it. Bisquick Mix&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span class="rr_introtext"&gt;2/3 C. Buttermilk&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span class="rr_introtext"&gt;1 tsp. Sugar &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span class="rr_introtext"&gt; 1 Tbsp. It’s really easy to do and maintain, as I’m sure they all are but other than Amish &lt;strike&gt;Enemy&lt;/strike&gt; Friendship Bread I haven’t done any. I’ve only used this in one recipe and I’ll post that next. I’m going to try some other recipes at some point to see how they are. &lt;br /&gt;For this starter you will need:&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 1&amp;nbsp; package active dry yeast (.25 ounce) (2½ teaspoons)&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 2 cups warm water&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 2 cups all-purpose flour&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; Random amount of sugar*&lt;br /&gt;Directions&lt;br /&gt;1.&amp;nbsp;&amp;nbsp;&amp;nbsp; In large non-metallic bowl, mix dry yeast, 2 cups warm water, and 2 cups all purpose flour and cover loosely. &lt;br /&gt;2.&amp;nbsp;&amp;nbsp;&amp;nbsp; Leave in a warm place to ferment, 4 to 8 days. Depending on temperature and humidity of kitchen, times may vary. Place on cookie sheet in case of overflow. Check on it occasionally.&lt;b&gt; I’ve never experienced overflow, mine doesn’t seem to grow much at all but I haven’t had a problem with the outcome of the bread so far so I’m sure it’s fine.&lt;/b&gt;&lt;br /&gt;3.&amp;nbsp;&amp;nbsp;&amp;nbsp; When mixture is bubbly and has a pleasant sour smell, it is ready to use. If mixture has a pink, orange, or any other strange color tinge to it, throw it out and start over. Keep it in the refrigerator, covered until ready to bake.&lt;b&gt; My starter only bubbles for the first hour or so after adding to it and then it goes smooth and creamy.&lt;/b&gt;&lt;br /&gt;4.&amp;nbsp;&amp;nbsp;&amp;nbsp; When you use starter to bake, always replace with equal amounts of flour and water mixture with a pinch of sugar. &lt;b&gt;*I don’t measure the sugar, sometimes it’s a tsp other times it is closer to a tbsp.&lt;/b&gt; So, if you remove 1 cup starter, replace with 1 cup water and 1 cup flour. Mix well and leave out on the counter until bubbly again, then refrigerate. If a clear to light brown liquid has accumulated on top, don't worry, this is an alcohol base liquid that occurs with fermentation. Whisk the cornstarch into the cold water until smooth. Add the mixture to the saucepan and bring to a boil. &lt;br /&gt;2.&amp;nbsp;&amp;nbsp;&amp;nbsp; Simmer for about 5 minutes, stirring constantly, until the desired consistency is reached. The sauce will thicken further as it cools. &lt;br /&gt;3.&amp;nbsp;&amp;nbsp;&amp;nbsp; Puree the sauce in a blender or with a handheld immersion blender and strain it through a fine sieve. Serve warm or cold. I think it was a bit less than half a pint extra. I didn’t drain the juice and I added a bit extra sugar but not too much as the cheesecake was sweet and I wanted a contrast. Straining took forever as I was using a tea strainer that sits in a teapot... I made cheesecake *applause*. There &lt;strike&gt;are&lt;/strike&gt; were about 100 1oz containers of cream cheese in the fridge so my sister, Jessica, suggested I make a cheesecake. So I found the top rated recipe on allrecipes.com and got to work.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://1.bp.blogspot.com/_nsbFF8gCqmw/S4wrZiQQB6I/AAAAAAAAAHQ/oFE4on-_bbI/s1600-h/IMG_4261.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" src="http://1.bp.blogspot.com/_nsbFF8gCqmw/S4wrZiQQB6I/AAAAAAAAAHQ/oFE4on-_bbI/s320/IMG_4261.jpg" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 15 graham crackers, crushed (I used 1 cup)&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 2 tablespoons butter, melted &lt;br /&gt;&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 4 (8 ounce) packages cream cheese&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 1/2 cups white sugar&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 3/4 cup milk&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 4 eggs&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 cup sour cream&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 tablespoon vanilla extract&lt;br /&gt;•&amp;nbsp;&amp;nbsp;&amp;nbsp; 1/4 cup all-purpose flour&lt;br /&gt;Directions&lt;br /&gt;1.&amp;nbsp;&amp;nbsp;&amp;nbsp; Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan. &lt;br /&gt;&lt;br /&gt;2.&amp;nbsp;&amp;nbsp;&amp;nbsp; In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan. &lt;br /&gt;&lt;br /&gt;3.&amp;nbsp;&amp;nbsp;&amp;nbsp; In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then stir in the eggs one at a time, mixing just enough to incorporate (I &lt;i&gt;slightly&lt;/i&gt; beat the eggs before mixing them in). Stir in sour cream, vanilla and flour until smooth. Pour filling into prepared crust. &lt;br /&gt;&lt;br /&gt;4.&amp;nbsp;&amp;nbsp;&amp;nbsp; Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for&lt;br /&gt;5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.&lt;br /&gt;&lt;br /&gt;Pretty straight-forward directions. I don’t know what I did wrong but my cheesecake cracked. Which I &lt;strike&gt;would be ok with had I not spent the evening before looking at pictures of cheesecakes and silently laughing at the cracked ones&lt;/strike&gt; was ok with because my sister described it this way&lt;a href="http://paulsbride.blogspot.com/2010/02/accessory-exchange.html"&gt; “Incredible cheesecake. Good enough to break my diet for cheesecake.”&lt;/a&gt; You need to understand, my sister is pretty much a cheesecake connoisseur so that says a lot! My favourite dessert at the moment is Tiramisu. I got the recipe from the cookbook my Aunt gave me for Christmas. It takes 20 minutes or less to put together and tastes amazing –so says everyone who’s tried it.&lt;br /&gt;&lt;br /&gt;• 3 TBS instant espresso powder (instant coffee or just super strong brewed coffee work too)&lt;br /&gt;• 3 TBS boiling water (unless you use super strong brewed coffee)&lt;br /&gt;• 1 ½ cups cold water (if using instant espresso or coffee)&lt;br /&gt;• 1 pack (8oz) cream cheese&lt;br /&gt;• ¾ cup heavy cream *&lt;br /&gt;• 1/3 cup sugar&lt;br /&gt;• 2 packages (3oz each) lady fingers**&lt;br /&gt;• Unsweetened cocoa powder for dusting&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;1. In a medium heat proof bowl, mix the espresso powder with the boiling water until dissolved. Add 1 ½ cups cold water, set aside.&lt;br /&gt;2. With an electric mixer, beat the cream cheese with the heavy cream and sugar until light and fluffy. (I find it helps if I beat the cream cheese before adding anything else so it gets a bit softer, also it never goes light and fluffy as the cream cheese is heavy but it is still possible to over beat)&lt;br /&gt;3. Spread a few tablespoons of the cream cheese mixture in the bottom of a 2 quart serving dish. Dip some ladyfingers one-by-one in the espresso and arrange in one layer on top of the cream cheese. Continue to layer the cream cheese and espresso dipped lady fingers until you run out, usually three layers of lady fingers and four of cream cheese. The Tiramisu can be refrigerated, covered, for up to one day... if it makes it to the fridge ;)&lt;br /&gt;4. I think the smaller cartons of it are 350ml and I use a whole one.  But I don’t add more sugar or cream cheese.&lt;br /&gt;**The last time I made this I used chocolate dipped chocolate almond biscotti instead of ladyfingers and it was marvellous! I also saved a bit of the biscotti and crumbled it on top with the cocoa.&lt;br /&gt;&lt;span style="color: red; font-weight: bold;"&gt;&lt;span style="font-style: italic;"&gt;WARNING!!!&lt;/span&gt;  This is a very rich dessert, and high in caffeine if you use the espresso. Set uncovered in middle of oven for about 45 minutes. Toss 2 or 3 times, checking cucumbers 'tenderness.' But I think with the wine vinegar you probably don’t need to add salt at all. I cooked half of them after soaking them for about 5 hours and the other half after about 24 hours. I think a couple of hours should be enough time for them to soak. I received a Martha Stewart cookbook for C’mas from my Aunt Polly and I have found many different, amazing looking recipes in it. Since the first week of February is pretty much gone I won’t be making anything. But next week I will tackle Lemon Custard Cakes. Sadly, I haven't had a single idea of what to do with it. And while cooking dinner I came up with a wonderfully ostentatious scheme! I have determined that every month I am going to pursue a new challenge. So maybe one month it will be reading certain books, cooking a certain amount of new foods, or inventing a new recipe (who wants to be my Guinea Pig???) Since January is pretty much over with, I won't be doing anything.
